Day 7 thoughts and Menu

Day 7(Sat 21st):

Weight: 189.8

Fresh squeezed orange juice

Handful pineapple

Fruit Smoothie

Lunch(12:30 pm):

Raw Salad: Arugula and Kale, Radishes, Carrots, Cucumber, Zucchini, Squash, Tomatoes, Red Onions, Walnuts, Goat Cheese w/ Caesar dressing

Chips, Salsa and Guacamole

Snack(4 pm): Cherries

Dinner(6 pm):

Whole Wheat Pasta w/ Seeds of Time Pasta sauce and sautéed veggies (Zucchini, Squash, Onions, Mushrooms, Celery and Tomatoes)

Raw side salad same as lunch

½ sprouted grain bagel w/ organic butter

Desert: Coconut Bliss Dark Chocolate Ice Cream

I am starting to really like salads for lunch and find that they fill me up. Plus chips and salsa and guacamole make me feel like I am indulging even though I’m not.

Oh and can I say again that Coconut Bliss Ice Cream is the best thing since sliced bread?

Day 6 Menu

Day 6(Fri 20th):

Weight: 191.00

Breakfast:

Fresh squeezed orange juice

Lunch: Raw Salad and Avacado, lettuce and salsa open-faced sandwich

Snack: Pineapple

Dinner: Steamed broccoli and squash, raw side salad and Cod w/ port cream sauce


As you can see I forgot to write Friday down so this is the minimum I could remember...

Day 5 Thoughts and menu

Day 5(Thur. 19th):

Weight: 191.2

Breakfast:

9:30 am- Fruit Smoothie: fresh orange juice, ice, frozen strawberries, frozen peaches, mango and pineapple

1 Banana

Lunch 1 pm:

Chopped Salad: Romaine and Arugula w/ zuchinni, carrots, red onions, roma tomatoes, red peppers, fresh corn w/ raw Caesar dressing

½ Apple Pie Lara Bar, raw almonds and dark chocolate

Snack 5:30 pm: Pineapple

Dinner: Curry Lentil Soup, ½ sprouted grain bagel, chips, salsa and fresh guacamole

Dessert: Coconut Bliss Dark Chocolate Ice Cream

Can I just say that this ice cream is heaven sent and is probably what will keep me going on this diet for a long while to come. LOVE IT. I don’t love that it was $6.50 for a little container at Raley’s, but that I can get over.

Snack (9 pm): Bowl of watermelon

I am usually hungry (or at least I think I am) around 9 so I usually have some fruit. But tomorrow I will try not to do that because I just don’t think I should. Then I go to bed feeling full, even though it was just fruit and I don’t like doing that. I actually don’t think I am hungry, I just think I’m hungry, I think my stomach is just emptying it’s contents and so I think I am full. But not really.

Unfortunately the soup I made was gross. Turns out I am not a fan of Lentil’s, at least in soup. I will not totally write them off yet. But that was the first meal that I haven’t been a fan of yet so that’s pretty good.

Salsa and Guac that won't dissapoint

Salsa Recipe (Courtesy of my mother-in-law):
1 large can of whole peeled tomatoes
(I used 4 fresh tomatoes and 1 small can of diced tomatoes but really you can use anything you have on hand, fresh or canned)
Juice of 1 lemon (more or less to taste)
1/3-1/2 bunch cilantro
1/2 onion
3-4 cloves of garlic (depending on how big they are)
Red Pepper Flakes
Salt
Throw everything in a blender and pulse. I blended it for too long and it came out a little too blended. I like it a little chunkier.

Guacamole
2-3 Avacadoes
1 tomato
1/4 red onion
1/3 bunch cilantro
Garlic Salt(or fresh garlic)
Juice of 1 lime (more or less to taste)
Salt
Pepper
A few dashes of green tobacco sauce (optional)

These are so delicious and easy. Go out and grab a bag of Guiltless Gourmet Chips (I found them at Raley's) and you will have a wonderful healthy appetizer for any party or just a yummy snack if your dinner turns out gross like mine did!

Breakfast:

Day 4 menu and thoughts

Day 4(Wed 18th):

Weight: 193.00

Breakfast:

Fruit Smoothie: fresh orange juice, ice, fresh strawberries, frozen peaches, mango and pineapple

Oatmeal w/ a little raw sugar- I was craving oatmeal really bad but after I ate it, I just felt heavy. I definitely won’t be eating such a big breakfast again. I learned my lesson. Even oatmeal (which is supposed to be one of the healthiest breakfasts) just didn’t satisfy me the same way eating only fruit for breakfast does. I will from now on stick to only fruit!

Lunch(2:00 pm):

Chopped Salad: Romaine and Arugula w/ zuchinni, carrots, red onions, cherry tomatoes, red peppers, fresh corn, raw walnuts and sunflower seeds w/ raw Caesar dressing

Apple Pie Lara Bar, raw almonds and dark chocolate

Snack(5:30 pm):

Watermelon and Pineapple

Dinner(7:00 pm):

Gazpacho

Detox pizza w/ mushrooms, cherry tomatoes, olives and zucchini

Guiltless Gormet corn chips w/ homemade salsa

I feel pretty good although I have a sneaking suspicion that my stomach does not like mushrooms. I put them on my pizza tonight to try them again but I think I am getting a dreaded stomach ache. At first I thought it was a sensitivity to Gluten but that turned out not to be true so I think it is mushrooms. If it isn’t then I have no idea!

I feel so great today. I have a lot of energy even though Afton kept waking up last night because she is teething. I really just feel good. And the food I have been eating is amazing because I KNOW it is healthy and my stomach can digest it quickly. Plus I love cooking so it feels great to make all my meals even though I am spending around 2-4 hours a day doing so.

Also noticing my clothes fitting a little looser. Yay! But the best thing is, the weight loss has not been my primary concern. I am more happy with the fact that I am liking what I am eating and feeling great after.

Oh and “Aha” moment of the week. I can now pray and bless my food before each meal and not feel silly for asking Heavenly Father to bless my pizza to nourish and strengthen my body.

Day 3 menu and thoughts

Day 3(Tuesday 17th):

Weight: 192.5

Breakfast:

½ Grapefruit

Handful of Strawberries

¼ Pineapple

I also tried making the Green Lemonade that Natalie raves about: NOT GOOD. I put ginger which was optional and I think that ruined it. I think I need to start out with some less dramatic vegetable juice first and work my way up.

Lunch(1 pm):

Salad of baby arugala, carrots, red onions, zuchinni, yellow bell pepper and liquid gold

3 egg omelet with mushrooms, onions, zuchinni, red bell pepper, fresh basil and cherry tomatoes

Dinner(6 pm):

Salmon w/ roasted veggies: Broccoli, Zuchinni, Carrots, Red Bell Pepper and Asparagus

Snack(9:00 pm):

Handful of Strawberries and cherries

The omelet was probably the best I have ever had (my mom agreed). I am constantly amazed at how full I am with eating so much less than I am used to. Plus vegetables never seemed very filling to me before but now they are. And I am always full in a good satisfied way, not a “I ate too much way.” The salmon was also very good, but I love salmon so it is hard to go wrong there.
